La Mouss’ Terrienne A pleasant interplay between honey and herbs

‘La Mouss’ Terrienne’ is a French honey amber beer, re-fermented in the bottle, with surprising organoleptic characteristics. Honey is not dominant due to the use of a typical local herb which, with its aromatic mix of thyme and lemon, dominates taste and smell. The herb is savory and is added during production and fermentation according to dosages kept secret as per the original recipe. The colour is deep amber, with a good, full-bodied, clinging foam. The nose immediately reveals a strong floral/herbal orientation. On the palate, however, the first perceived descriptor is a full body with notes of honey and light lavender, which immediately give way to savory that covers both the sweetness of the honey and the lavender notes. In the aftertaste, it is difficult to perceive bitterness, which is also covered by this herb. Unique in its kind, with its 7° vol. alcohol it is suitable for many convivial occasions, as well as enriching culinary occasions strong in flavour. Serve chilled at 6°C in a goblet-type glass, as it has no need to amplify aromas or limit oxidation. Keep cool when not close to consumption.
